BABY CARROTS...NOT A HEALTHY FOOD?...!

you might know already that “baby” carrots are made using the larger crooked or deformed carrots which are put through a machine which cuts and shapes them into cocktail carrots. but did you know that once the carrots are cut and shaped into small (baby) carrots, they are dipped in a solution of water and chlorine in order to preserve them?
there's a big debate about this because on one side there are producers who claim that the water solution in which the carrots are washed contains 90% less chlorine than tap water. however the carrots should be rinsed again with 'clean' water to remove the chlorine.
then there are nutritionist, chemists, doctors etc who are warning the consumers that chlorine is a very well-known carcinogen.


i think that chlorine is not an issue because chlorine by itself is not dangerous for our health at all.... the problem is when chlorine comes in touch with organic material. the byproducts formed when chlorine reacts with organic tissue are over 10,000 times more toxic than chlorine. and in case you didn't know, all pre-chopped veggies are treated with chlorine to eliminate bacteria.
so the next time you buy baby carrots or pre-cut veggies, consider buying the organic ones which are rinsed in citrus based, nontoxic solution.

what do i do?
i buy only whole vegetables and prepare them myself. i love carrots because they are a very convenient snack on the go. so i usually wash and peel them and then i chop them in baby carrots. i can keep them refrigerated for a week or even more.

pre-chopped salads: yucky! there's more bacteria in those bags of salad than in a pair of socks that have been worn for a week! scientifically proven! 
it takes only 10 minutes to chop your salad and soak it in water with 2 tsp of baking soda to eliminate bacteria. rinse it, wash it again and dry it in a salad spinner. i keep our lettuce in a vacuum sealed ziplock bag for days!
